| 为了探索水晶葡萄采后防腐保鲜的方法，以云南弥勒‘水晶’葡萄果实为试材，研究了SA、SNP及复合处理对‘水晶’葡萄在8℃贮藏条件下的防腐保鲜效果及其相关机制。结果表明，SA、SNP及复合处理均能有效降低‘水晶’葡萄采后的失重率、果粒脱落率、腐烂指数和果粒染菌率，抑制贮藏期间叶绿素、类胡萝卜素、维生素C、葡萄糖、淀粉含量的降低，抑制可溶性固形物、可溶性糖含量的升高，加速总氮和游离氨基酸的降解，提高固酸比和可溶性蛋白质含量。此外，SA和复合处理使果实硬度保持在较高水平；SA处理使总酚和总黄酮的下降幅度加大，而SNP和复合处理则有效抑制其下降幅度。可见，SA、SNP及复合处理均能提高‘水晶’葡萄的耐贮性及贮藏品质，可作为防腐保鲜剂在‘水晶’葡萄的实际贮运中应用，但综合各指标发现复合处理效果更佳。 |

| In order to develop a new fresh-keeping technique of ‘Shuijing’ grape, the effects of SA, SNP and combined treatments on postharvest rots and fresh-keeping of ‘Shuijing’ grape in Mile, Yunnan were studied during storage at 8 ℃ temperature. The results showed that SA, SNP and combined treatments could effectively reduce ‘Shuijing’ grape weight loss rate, fruit drop rate, decay index and fruit bacterial rate; inhibit the decrease of chlorophyll, carotenoids, vitamin C, glucose and starch contens; inhibited the soluble solids and soluble sugar contents, and accelerated the contents of total nitrogen and free amino acids. Moreover, SA and combined also make the fruit firmness kept at a high level; SA treatment accelerated the decline range of total phenols and total flavonoids, but SNP and combined treatments could effectively inhibit them decrease. Thus, SA, SNP and the combined treatment could improve 'Shuijing' grape resistant storage and storage quality, as a preservative agent the application in the actual storage of ‘Shuijing’ grapes, but combined treatment effect was good after the composite index. |
