摘要:苹果果实色泽是评价果实商品性的关键指标,也关系着果实的营养保健功能,果实最终色泽主要由叶绿素、类胡萝卜素、花青素、类黄酮等各种色素的相对含量决定。以不同色泽野生种质“东北黄海棠(Malus.prunifolia(Willd.)Borkh.)”、“冬红果(Malus.prunifolia(Willd.)Borkh.)”、“早白海棠(Malus.asiatica Nakai.)”果实为试材,采用色差计对果实发育不同时期果皮色泽进行测定、采用比色法测量果皮中叶绿素、类胡萝卜素、花青素、类黄酮和总酚等色素的相对含量,分析果皮色素、色差的变化及其相关性。结果表明3个种质苹果发育过程中果皮类胡萝卜素、叶绿素、总酚和类黄酮整体呈下降趋势,类胡萝卜素、叶绿素在东北黄海棠近成熟期含量略有上升,总酚和类黄酮在东北黄海棠花后50天到成熟期含量逐渐上升;冬红果近成熟期果实果皮花青素含量增加,其他三个种质花青素含量变化呈略微下降趋势;类胡萝卜素与叶绿素a、叶绿素b、总叶绿素、花青素、类黄酮、总酚以及L*值都有显著或极显著相关性;叶绿素与类黄酮、总酚有显著或极显著相关性;L*值与花青素、总酚、类黄酮、类胡萝卜素、叶绿素显著或极显著相关;不同种质苹果皮色差值、各色素之间的相关性不完全一致。 |

Abstract:Apple fruits colorare the key indicators of commercial,and also have nutrition health care function, fruit color is composed of chlorophyll, carotenoid, anthocyanin , flavonoids and so on. The materials of study is four developmental periods friuts skin of four wild germplasm apple. Determination the skin color of three different color wild resources of fruit during the period of development by colorimetric method, and determination chlorophyll, carotenoids, cyanine glycosides, flavonoids and total phenol of fruit skin. Meanwhile, analysis the changes of fruit skin pigments content during the period of development, and the their mutual relations. Results showed that, on the whole, the carotenoids, chlorophyll, total phenol and flavonoids is on the decline of three wild germplasm apple skin in the process of development. carotenoids, chlorophyll in ‘dongbeihuang crabapple’ and ‘ wanbai crabapple’ nearly late maturity levels increased slightly, the total phenol and flavonoids in ‘dongbeihuang crabapple’ 50 days after full bloom to mature content is increasing; ‘donghongguo’cyanine glycosides content increases in nearly mature fruit skin, the other two germplasm cyanine glycosides content is slightly downward trend; Carotenoids and chlorophyll a and chlorophyll b, total chlorophyll, cyanine glycosides, flavonoids, total phenol and L* value has significant or extremely significant correlation; Chlorophyll and flavonoids, total phenol were significant or extremely significant correlation significantly; the L* value with cyanine glycosides, total polyphenols, flavonoids, carotenoids, chlorophyll significantly or extremely significantly correlated; The correlation of pigments and color values is not the same between different germplasm apple skin. |
