本研究通过对酶法脱脐橙白皮层的微生物培养基成分进行优化,测定发酵液中果胶酯酶(PE)、果胶裂解酶(PL)、聚半乳糖醛酸酶(PG)活力,探讨碳源量、氮源种类和含量对3种果胶酶活性的影响。单因素和响应面优化试验结果表明:在氮源硝酸铵:硫酸铵=3.02:1、氮源添加量为8.52 g/L、碳源添加量为9.26 g/L时,PG酶活为497.26 U/mL,PL酶活为461.05 U/mL,PE酶活为40.42 U/mL,提升PG酶活141.83%,PL酶活46.85%,PE酶活58.14%,去除白皮层效果提升显著,为发展环境友好型橙汁胞加工工艺提供参考。 |

In the process of enzymatic de-sac endocarp in citrus, the fermentation medium optimized to explore amount of carbon, nitrogen sources and types of content by determine pectinase activity. The results show that: in nitrogen ratio was 3.02 (ammonium nitrate / ammonium sulfate), nitrogen dosage 8.52 g / L, carbon dosage 9.26 g /L , the PG activity was 497.26 U / mL, PL activity was 461.05 U / mL, PE activity was 40.42 U / mL. By study on optimization of medium for fermentation of enzymatic de-sac endocarp in citrus, research on it effect of the PE, PL, PG, in order to have some guidance for enzymatic de-sac endocarp citrus production application and promotion. |
