为了解无氧条件对采后菠萝果实黑心病的影响,在三个贮藏温度(15℃,20℃和25℃)下,使用三种CO2和N2充气比例对菠萝进行包装处理,对菠萝果实中总酚含量、苯丙氨酸解氨酶(PAL)活性及多酚氧化酶(PPO)活性变化以及菠萝黑心病的发病情况统计。结果表明,三种CO2和N2气调包装在三个温度下均能降低菠萝果肉中总酚含量、PAL活性及PPO活性,抑制菠萝黑心病的发生。另外15℃,10%CO2和90%N2充气比例为抑制菠萝果实黑心病最佳组合。 |

In order to understand the effect of anaerobic condition on postharvest pineapple fruit blackheart, pineapple fruits were stored at three temperature (15℃,20℃ and 25℃)by packing with three proportion of CO2 and N2, respectively. Total phenolics,the activity of phenylalanine ammonialyase(PAL)and polyphenol oxidase(PPO)were determined and the severity of pineapple blackheart was evaluated. The results showed that three proportion of CO2 and N2 packaging could all reduce total phenolics and the activity of PAL and PPO,and inhibited the incidence of blackheart disease at three temperature. In addition, the treament stored at 15℃, 10%CO2 and 90%N2 packaging was the best combination for control pineapple fruit blackheart. |
