      为探索无花果电商物流贮运期安全物理保鲜技术,以“玛斯义.陶芬” 无花果为试材,研究电解式臭氧水处理对电商物流包装方法下贮运期果实表面微生物数量与果实腐烂率的影响。结果表明,电解式臭氧水处理有效降低了无花果表面微生物的增加与腐烂率的上升,至贮运结束时,处理组果实表面菌落总数较对照显著降低了84.56%(P<0.05),霉菌总数显著降低了57.17%(P<0.05),酵母菌总数显著降低了97.38%(P<0.05), 果实腐烂率增长幅度显著降低了0.43倍(P<0.05),大肠菌群数量也明显降低。表明电解式臭氧水物理防腐保鲜技术在无花果电商物流贮运领域具有较好的应用潜力。
英文摘要:
      The experiment was done in order to evaluate the effect of electrolytic ozone water on anti-microbial of fig fruits during e-commerce logistics storage and provide reference for substitute technology of chemical food preservative in fig fruits. ‘Masui Dauphine’ figs were dipped into electrolytic ozone water before e-commerce logistics storage so that inhibitory potentials of microbial population on fruit surface and fruit decay were detected. Results showed that compared with the control fruits of purified water treatment, the electrolytic ozone water treatment could effectively inhibit the growth of microorganism on fruit surfaces and suppress fruit decay, total numbers of colony were reduced by 84.56% (P<0.05), mould population were reduced by 57.17% (P<0.05), yeast population were reduced by 97.38% (P<0.05), and coliform population on fruit surfaces of electrolytic ozone water treatment were also suppressed, so fruit decay growth amplification of electrolytic ozone water treatment were suppressed by 42.86% (P<0.05)at the end of e-commerce logistics storage. It indicated that electrolytic ozone water has a great application potential in physical preservation field of fig fruits during e-commerce logistics storage and transportation.
