      【目的】通过研究不同采摘时期富士糖心苹果在普通冷藏和气调贮藏过程中的果实糖心的变化规律,为云南昭通富士糖心苹果的采收和贮藏提供依据。【方法】以昭通市鲁甸县的不套袋富士苹果为研究对象。将不同采摘时期的富士苹果贮藏在普通冷藏和气调贮藏两种条件下,每隔20天调查果实的糖心果率、糖心指数的变化及果实褐变情况。【结果】随着采收期的延长,果实成熟度的升高,果实糖心果率和糖心指数都逐步明显上升;三个不同采摘时期红富士糖心苹果在普通冷藏和气调贮藏过程中糖心症状随着贮藏时间的延长有逐步消失的趋势,且完全消失的时间随着采收期的延长而增加;糖心症状的消失速率与贮藏方式密切相关,同时采收的果实在普通冷藏状态下比气调状态下糖心症状消失要早40-60天,且气调贮藏在贮藏后期比普通冷藏果实发生褐变的风险要高。【结论】昭通糖心苹果随着贮藏时间的延长糖心症状将逐渐消失,与文献报道的水心病不易贮藏,易发生褐变腐烂的表现不完全相同,是当地特殊的自然条件下形成的产品。

      【Objective】In order to provide the basis for the harvesting and storage of 'Fuji'“sugar-cored” apple in Zhaotong, Yunnan, the changes of “sugar-cored” of 'Fuji' apple in different picking periods were studied during cold storage and controlled atmosphere storage.【Method】In this study, un-bagged ' Fuji 'apples from Ludian of Zhaotong City were selected as experimental material. The fruit rate of "sugar-cored"and "sugar-cored" index and browning of 'Fuji' apple were investigated every 20 days under the condition of normal cold storage and controlled?atmosphere?storage.【Results】With the extension of harvest period, the ripeness of fruit increased, and the "sugar-cored" rate and "sugar-cored" index of fruit increased gradually; During the normal cold storage and controlled atmosphere storage, the symptom of "sugar-cored" gradually disappeared with the storage time, and the time of complete disappearance increased with the extension of harvest time; The disappearance rate of "sugar-cored" symptoms is closely related to the storage mode. Fruits harvested at the same time, the symptoms of "sugar-cored" disappeared 40-60 days earlier in cold storage than in controlled atmosphere storage, and the risk of fruit browning in controlled atmosphere storage was higher than that in cold storage. 【Conclusion】The symptom of "sugar-cored" will disappear gradually with the prolongation of storage time. but its commercial property does not decrease significantly,which is not exactly the same as the performance of water core disease,and it is a product formed under local special natural conditions.
