以‘台农1号’百香果果汁为试材,研究了其黄酮类物质组分、含量及发育变化。结果表明:果汁中共检测到42种黄酮类物质,金丝桃苷、夏佛塔苷、异荭草素、羟基红花黄色素A、堪非醇3-新橙皮糖苷是果汁中的5种主要黄酮类物质。花后30d为各黄酮种类和含量富集最高的时期,后随果汁发育下降,花后50d到60d黄酮含量略有回升。综上所述,花后30d黄酮含量最高且组分丰富,鉴于果实发育前期果汁量少且酸含量高,仅推荐,仅推荐天然抗氧化保健品及功能性食品开发等用途,而鲜食在花后60d,即果实完全成熟后效果最佳。 |

In this study, flavonoids composition and content of passion fruit(‘Tainong No.1’)juice were analysis at 4 developmental stages. The results showed that 42 kinds of flavonoids were detected in passion fruit juice, in which hyperoside, schaftoside, isoorientin, hydroxysafflor yellow A, and kaempferol 3-neohesperidoside were observed at the higher content. Most of flavonoids were observed at the highest content in 30 days after flowering, and increased during fruit development, then improved slightly at 50 to 60 days after flowering. In conclusion, we recommend the fruit juice of 30 days after flowering only for natural health products use due to less juice and high acid content during this period, even the rich components and highest flavonoids content, while the juice is suitable for eat directly in 60 days after flowering due to the higher flavonoids content and better flavor. |
