      以不同用途的枣品种(以富士苹果、红肉苹果、玉露香梨为对照)为试材,通过研究5种取汁方法(方法1:直接挤汁;方法2:研磨后用纱布过滤挤汁;方法3:果肉+等量水榨汁;方法4:果肉+2倍水榨汁;方法5:液氮研磨+等量水或2倍水)对可溶性固形物含量测定的影响,以确定不同用途枣果实最适宜的可溶性固形物含量测定方法。结果表明:5种方法均可作为测定可溶性固形物含量的取汁方法,其测定结果都具有良好的重复性,但针对不同用途枣品种采用取汁方法不同。直接挤汁测定更适用于鲜食多汁的鲜食枣品种;“取果肉+2倍水榨汁”适用于果实汁液较少、难以挤汁的制干品种;对于长距离运输或者集中统一测定的果实,可用液氮研磨成枣粉,用“1g枣粉+等量水”进行可溶性固形物的测定。
英文摘要:
      The jujube varieties with different uses (Fuji apple, red meat apple, yulu pear as control) were used as test materials. Method 2: Filter and squeeze with gauze after grinding; Method 3: Juice pulp with equal amount of water; Method 4: Juice pulp with 2 times water; Method 5: The effect of liquid nitrogen grinding + equal amount of water or twice of water) on the determination of soluble solid content, in order to determine the most suitable method for determination of soluble solid content in jujube fruits of different uses. The results showed that all the five methods could be used to determine the content of soluble solids, and the determination results had good repeatability, but different methods were used for different jujube varieties. Direct juicing was more suitable for jujube varieties with juicy fresh food. "Extract pulp +2 times water for juicing" is suitable for dried varieties with less fruit juice and difficult to squeeze; For long-distance transportation or centralized unified determination of fruits, liquid nitrogen can be ground into jujube powder, with "1g jujube powder + equal amount of water" for the determination of soluble solids.
