      为了延缓香蕉腐败变质,本研究以香蕉为试材,用50 mg/L浓度的赤霉素(GA3)溶液对其进行浸泡处理,探究了GA3对香蕉果实采后的硬度、色差、褐变面积、可溶性固形物(TSS)、抗坏血酸(ASA)、丙二醛(MDA)、相对电导率、多酚氧化酶(PPO)、过氧化物酶(POD)、过氧化氢酶(CAT)以及抗坏血酸过氧化物酶(APX)的影响。研究结果表明,GA3有效地延缓了香蕉果实褐变,保持果实的硬度和色泽,抑制了可溶性固形物和抗坏血酸含量的减少,PPO和POD的酶活较对照组分别降低了49.98%和35.70%,CAT和APX的酶活较对照组分别提高了43.37%和38.41%,同时还可以明显地抑制电导率的上升和MDA的积累,维持果皮细胞的膜结构和功能。由此表明,GA3可有效地延缓香蕉的衰老进程,保持果实的品质,延长香蕉果实的贮藏期

      In order to delay fruit deterioration, each banana sample was soaked in gibberellin (GA3) solution with the concentration of 50 mg/L. The effects of GA3 on multiple indicators were analyzed, including postharvest hardness, color difference, browning area, total soluble solids (TSS), ascorbic acid (ASA), malondialdehyde (MDA), relative conductivity, polyphenol oxidase (PPO), peroxidase (POD), catalase (CAT) and ascorbic acid peroxidase (APX). The results showed that GA3 pretreatment could effectively delay the browning of banana, maintain the hardness and its color, inhibit the reduction of TSS and ASA content. Compared with the control group, the enzyme activities of PPO and POD decreased to 49.98% and 35.70% respectively, and the enzyme activities of CAT and APX increased to 43.37% and 38.41% respectively. At the same time, it could also significantly inhibit the rise of electrical conductivity and the accumulation of MDA, and maintain the membrane structure and function of pericarp cells. In conclusion, GA3 pretreatment could effectively delay the aging process of bananas, maintain its quality, and prolong the storage period
