为优化鲜榨梨汁评价体系,并筛选出适宜制汁的梨树新品种(系)。对河北省林科院种质资源圃和育种圃内的53个梨树品种(系)的可溶性固形物含量、可滴定酸含量、Vc含量、总酚含量、褐变度及pH值等理化指标进行测定,对梨汁甜度、酸度、香气和褐变程度等感官指标进行问卷调查和量化,结合各品种(系)的出汁率进行综合评价。梨汁评价指标与其对应的梨果理化指标相关性较强,可通过梨汁评价与理化指标筛选梨汁品种(系)。初步筛选出8个适宜制汁的品种(系):041878、长二十世纪、金二十世纪、SJ051105、冀蜜梨、041114、金光、黄冠梨和迎霜。适宜做梨浓缩汁的品种(系)为:041088、041047、黄冠梨、041615、迎秋、金二十世纪和冀蜜梨。 |

To optimize the evaluation system of freshly squeezed pear juice, and screen out new varieties (lines) of pear trees suitable for juice production.The physical and chemical indicators such as soluble solids, titratable acid, Vc, total phenol content, browning degree and pH value of 53 pear tree varieties (lines) in Hebei Academy of Forestry and Grassland Science were determined.The sensory indexes such as sweetness, acidity, aroma and Browning degree of juice were evaluated and questionnaires were conducted. Combined with the juice yield of each variety (strain), quantitative indicators were used to screen.?There was a strong correlation between the evaluation indexes of pear juice and the corresponding physical and chemical indexes of pear fruit. Nine varieties (lines) suitable for juice production were selected preliminarily:041878, Long twentieth century, Jin twentieth century, SJ051105, Jimi pear, 041114, Jinguang, Huangguan pear and Yingshuang. The varieties (strains) suitable for making pear juice concentrate were:041088, 041047、Huangguan pear, 041615, Yingqiu, Jin twentieth century and Jimi pear. |
