以金丝小枣、冬枣、灰枣、骏枣、长红枣、赞皇大枣、婆枣和圆铃枣为试材,采用高效液相色谱法,测定了8个主栽枣品种的花及不同发育阶段果实中主要糖组分和cAMP的含量。结果表明,糖成分组成及含量因品种、器官和果实发育阶段而异;从开花到果实成熟过程中依次大量积累果糖、葡萄糖和蔗糖,成熟果实总糖、葡萄糖和果糖含量均是花的9倍左右,在花和幼果中未检测出蔗糖。枣成熟果实中两种单糖(葡萄糖、果糖)和一种双糖(蔗糖)的含量均高。不同枣品种成熟果实中两种单糖(果糖和葡萄糖)的含量均很相近、以果糖含量略高,但单糖与蔗糖的比例差异显著,金丝小枣、冬枣、灰枣、骏枣和长红枣 5 个品种的果糖和葡萄糖含量均高于蔗糖,而赞皇大枣、婆枣和圆铃枣3个品种的蔗糖含量均高于果糖和葡萄糖。根据以往文献可将成熟期果实蔗糖含量所占比例不同,可将枣品种分为蔗糖积累型和单糖积累型。在8个供试品种中,金丝小枣的葡萄糖和果糖含量,赞皇大枣的蔗糖含量最高。8个主栽品种cAMP含量均随着果实发育和成熟逐渐积累,成熟果实中的cAMP含量约为幼果的7倍;在成熟期,以婆枣cAMP含量最高、为192.52 μg/g,圆铃枣的最低、为110.64 μg/g。婆枣果实发育过程中,其cAMP含量与总糖、葡萄糖、果糖和蔗糖的含量均呈正相关,且达到显著水平,其中蔗糖含量与cAMP含量相关系数最高达到0.91。 |

Using ''Jinsixiaozao'', ''Dongzao'', ''Huizao'', ''Junzao'' and ''Changhongzao'', ''Zanhuangdazao'', ''Pozao'' and ''Yuanlingzao'' as test materials,the contents of sugar and cAMP in 8 leading cultivars and at different fruit developmental stages of Chinese jujube were measured by HPLC. The results showed that the composition and content of sugar varied with cultivar and fruit developmental stage. A large amounts of glucose, fructose and sucrose were accumulated from flowering to fruit maturation. Compared with the flower, the total sugar, glucose and fructose were about in the fruit of cultivar ''Huizao'' was 9 times of those in the flower, and the sucrose content was not detected in the flowers and very young fruit. With most other fruits mainly accumulated either the monosaccharide or disaccharide, the contents of both monosaccharide (glucose and fructose) and disaccharide (sucrose) in Chinese jujube were quite high. The contents of fructose and glucose in mature fruits of different cultivars were very similar, but the content of fructose was slightly higher, and the content differences between fructose, glucose and sucrose were significant. In the mature fruit of cultivar ''Jinsixiaozao'', ''Dongzao'', ''Huizao'', ''Junzao'' and ''Changhongzao'', the contents of fructose and glucose were more than the content of sucrose; While in mature fruit of ''Zanhuangdazao'', ''Pozao'' and ''Yuanlingzao'' , sucrose content was the highest. According to the different proportion of sucrose content in mature fruit, the fruits of different cultivars can be divided into sucrose accumulation type and monosaccharide accumulation type. The mature fruit of ''Zanhuangdazao'' contained the highest of sucrose and the highest contents of glucose and fructose were in ''Jinsixiaozao''. On the other hand, the content of cAMP was consistantly accumulated with fruit development, the total cAMP in the mature fruit of ''Huizao'' was 7 times of that in the young fruit. In the eight tested cultivars, the highest content of cAMP was in ''Pozao'', 192.52 μg/g. The lowest content of cAMP was in ''Yuanlingzao'', 110.64 μg/g. The content of cAMP was positively correlated with the content of total sugar, glucose, fructose and sucrose during fruit development, and reached a significant level. The correlation coefficient between sucrose content and cAMP content was up to 0.91. |
