      为更好地满足消费者对水果品质指标的要求,提升水果品质分析的效率, 本文开发了一种水果中维生素C的快速检测方法。本方法以偏磷酸溶液萃取水果中的维生素C,以石墨化炭黑吸附水果中的干扰物质。本方法制备了聚甲基丙烯酸修饰的银纳米簇材料,维生素C还原银离子从而增大了银纳米簇的尺寸并改变了的银纳米簇溶液的光学性能。在优化得到最佳检测条件后,建立了基于银纳米簇的比色传感器快速检测水果中维生素C的方法。结果表明,检测方法可检出的最小浓度为0.03 mg/kg,表现出了较好的抗干扰能力,成功应用于橙子、葡萄和梨中维生素C的分析。将银纳米簇材料应用于水果的品质分析,有助于加快检测速度,降低检测成本,实现水果的精准快速分级。
英文摘要:
      In order to meet the requirements of consumers on fruit quality and improve the efficiency of fruit quality analysis, a rapid detection method of vitamin C in fruit was established in this paper. The vitamin C in fruit was extracted by metaphosphoric acid solution, and the interfering substances in fruit were absorbed by graphitized carbon black. Polymethacrylic acid modified silver nanocluster material was prepared, and silver ions were reduced by vitamin C to increase the size of silver nanocluster and change the optical properties of silver nanocluster solution. After optimizing the detection conditions, the silver nanoclusters-based colorimetric sensor was established for the rapid detection of vitamin C in fruit. The results showed that the limit of detection was 0.03 mg/kg. The method showed good anti-interference ability, and was successfully applied to the analysis of vitamin C in oranges, grapes and pears. The application of the silver nanocluster material in fruit quality analysis is helpful to accelerate the detection speed, reduce the detection cost, and realize the accurate and rapid classification of fruit.
