      为探究不同产地对芒果果实营养品质与香气成分的影响,以产自金沙江干热河谷区云南华坪县石龙坝镇、四川攀枝花仁和镇和金江镇凯特芒果为研究对象,测定其营养品质与香气组分,包括VC、可溶性蛋白、可溶性糖、可滴定酸、多酚、总黄酮、儿茶素、类胡萝卜素、游离氨基酸和香气成分。结果表明:不同产地凯特芒果果实中的VC、可溶性糖、可滴定酸、多酚、黄酮、类胡萝卜素、游离氨基酸和香气成分含量都存在显著差异;华坪石龙坝镇产果实可溶性糖、游离氨基酸、多酚、黄酮、叶黄素和β-胡萝卜素含量最高,而攀枝花金江镇果实含量最低;通过主成分分析提取到两个能体现芒果营养品质性状的主成分,构建的营养品质评价模型为F=0.838 F1+0.162 F2。品质综合得分排名由高至低依次为:华坪石龙坝镇、攀枝花仁和镇、攀枝花金江镇。本研究结果为金沙江干热河谷区凯特芒果的合理种植和综合利用提供了理论依据。

      In order to explore the effect of different cultivation site on the fruit quality and aroma composition of mango, in this study, Kate mangoes produced in Shilongbei town, Huaping county, Yunnan province, Renhe town and Jinjiang town, Panzhihua city, Sichuang province, which are located in dry hot valley of Jinsha River, were used as samples and subjected to determination of their quality including VC, soluble protein, soluble sugar, titratable acid, polyphenols, total flavonoids, catechins, carotenoids, free amino acids and aroma components. The results showed that the contents of VC, soluble sugar, titratable acid, polyphenols, flavonoids, carotenoids, free amino acids and aroma components were significantly different in the fruits produced in three different plantation sites. The level of soluble sugar, free amino acid, polyphenols, flavonoids, lutein and β-carotene was highest in the fruits produced in Shilongbei town, Huaping county and lowest in Jinjiang town, Panzhihua city. Two principal components reflecting the quality of mango were obtained through principal component analysis (PCA), and the evaluation model of fruit quality was F=0.838F1+0.162F2. The score of comprehensive quality of the fruits was as follows: Shilongbei town, Huaping county, Renhe town Panzhihua city and Jinjiang town Panzhihua city. The results of this study provided a theoretical basis for the rational planting and comprehensive utilization of Kate mango in the dry- hot valley of Jinsha River.
