      为探究2种不同类型贵州本地大蕉类胡萝卜素代谢变化,利用高效液相色谱串联质谱法对橙黄肉大蕉BGD与白肉大蕉BWD果实类胡萝卜素进行定性和定量检测,对类胡萝卜素成分和积累量的种内时序性差异和同时序的种间差异进行分析。定性分析表明:BGD与BWD的果实分别检测到32种和28种类胡萝卜素。定量分析表明:BGD果实发育3个阶段类胡萝卜素积累量均显著高于BWD,在成熟期BGD的类胡萝卜素含量是BWD的7.54倍;BGD类胡萝卜素的合成主要发生在果实发育的中后期,其含量先升高后降低,而白肉大蕉类胡萝卜含量持续降低;BGD除幼果期叶黄素含量最高,其他时期均为β-胡萝卜素含量最高,β-胡萝卜、α-胡萝卜素、叶黄素是其主要类胡萝卜素成分;叶黄素、β-胡萝卜素、紫黄质-肉豆蔻酸酯-发酸酯是BWD的主要类胡萝卜素成分。研究结果为揭示两种大蕉果实类胡萝卜素积累机理奠定基础。

      To investigate the changes in carotenoid metabolism in two different types of Guizhou native plantains, carotenoids were qualitatively and quantitatively detected in orange and yellow-fleshed plantain BGD and white-fleshed plantain BWD fruits using high-performance liquid chromatography tandem mass spectrometry (HPLC-MS/MS), and the intraspecific temporal and interspecific variations in the carotenoid compositions and accumulations, as well as their relationships with fruit color, were analyzed. Qualitative analysis showed that 32 and 28 carotenoids were detected in BGD and BWD fruits, respectively. Quantitative analysis showed that: the carotenoid accumulation of BGD was significantly higher than that of BWD at three stages of fruit development, and the carotenoid content of BGD was 7.54 times higher than that of BWD at the ripening stage; the synthesis of carotenoids in BGD mainly occurred at the middle and late stages of fruit development, with its content increasing and then decreasing, whereas that of white-fleshed plantain was continuously decreasing; the carotenoid content of BGD was the highest except for that of lutein during the juvenile stage, and β-carotene was the highest during all other periods. BGD had the highest β-carotene content except for lutein at the young fruit stage, and β-carotene, α-carotene, and lutein were its main carotenoid components; lutein and β-carotene were the main carotenoid components of BWD. The results of the study lay the foundation for revealing the carotenoid accumulation mechanism of the two plantain fruits.
